One might argue that having a few friends over to watch the football game, basketball game, WWE pay-per-view (have I mentioned how much I love professional wrestling yet? I don’t think so. A LOT) constitutes a party. I would argue that a gathering only becomes a party when there’s chips and dip involved. And some tasty beverages, but that’s a given right?. Dip is so standard for parties, you might think it would go out of food fashion. Another passe relic like cheese puffs. But no, dips live on. Even boring old sour cream and onion dip can be classed up by tweaking it to Caramelized Onion Dip (delicious) or Charred Onion Dip (on my “to try” list). Most dips are very easy to assemble. Yes assemble, usually no cooking involved :) You can also make them in advance and just refrigerate until an hour or so before your guests arrive. Read as – time saver, stress reducer.
This is one of those simple to assemble dips. I’m almost ashamed to receive compliments on it because there are so few ingredients and it’s ridiculously easy.
Sharp feta, creamy greek yogurt, lube it up with oil.
Add some sun-dried tomatoes.
Feta and Sun-Dried Tomato Dip – Real Simple
- 4 oz. crumbled feta
- 1 cup low fat greek yogurt
- 2 tbp. olive oil
- 1/2 cup chopped, oil-packed sun-dried tomatoes (drained)
- Kosher salt
- pretzel crisps
In a medium bowl, mash together the feta, yogurt, and oil. Stir in the sun-dried tomatoes. Season with salt and pepper. Serve with the pretzel crisps.
Yield – 1 1/2 cups
– PRETZEL CHIPS ARE A MUST! I used the plain pretzel chips. The combo of the thin, buttery crisps with the sharp, salty, deep tomato flavor was spot on. I’m sure sturdy kettle baked chips would work well too.
