Just a short little smoothie post for today. Last week, I had some leftover guava juice after making this great guava berry smoothie. I also had a boatload of blueberries to use up before we left for some camping / hiking / conferencing (not me :P) / sightseeing in Cali. Most of the blueberries wound up in the freezer, but some made their way into the blender and this surprisingly good tropical smoothie.
Pink Paradise Smoothie
- 1 cup cubed mango, frozen
- 1 banana, broken into pieces, frozen
- 2/3 cup blueberries
- 1 cup guava juice
- 1 cup unsweetened coconut milk (or almond or soy)
Add all the ingredients to a blender and blend until smooth.
Yield – 2 servings
Please forgive the cheesy name, it’s late, I’m tired, and that’s about as much creativity I can currently muster ;)
